Fuku Opens New West Palm Beach Restaurant with Visium Far-UVC Technology

The fast-casual brand is bringing continuous air and surface sanitization into the back of house at its new CityPlace location.

Fuku has opened its new CityPlace location in West Palm Beach, bringing Visium Far-UVC technology into the restaurant environment as part of the brand’s continued focus on innovation, operational excellence, and guest experience.

Founded in 2015 out of David Chang’s Momofuku Noodle Bar in New York, Fuku began as a secret menu item: a spicy fried chicken sandwich that quickly grew into a standalone restaurant concept. Today, as Fuku opens its second company store, the brand is piloting Visium Far-UVC as part of its forward-thinking approach to restaurant operations.

“Fuku has always had innovation in its DNA,” said Claudia Lezcano, CEO of Fuku. “As we open our new West Palm Beach location, we’re excited to pilot Visium and bring a new level of technology into the restaurant environment.”

For Visium, the Fuku installation represents an important first step into the restaurant and foodservice sector.

“Fuku is exactly the kind of forward-thinking operator we hoped would lead Visium’s expansion into restaurants and foodservice,” said John Rajchert, Co-founder and CEO of Visium. “The back of house is one of the hardest-working environments in any restaurant. Visium is ceiling-installed, out of the way, and built to support those spaces continuously without disrupting the experience for teams or guests. We’re excited to have Fuku as our first restaurant client and believe this is just the beginning of what Far-UVC can bring to the industry.”

Visium Far-UVC fixtures are installed in the ceiling, keeping the technology out of the way while allowing it to work directly in the spaces that matter most. In high-use restaurant environments, that means an added layer of continuous air and exposed-surface sanitization in areas like the back of house, without adding noise, odors, or disruption to daily operations.

For Fuku, the back of house was a natural place to begin.

“For us, the back of house is where everything comes together,” said Lezcano. “It’s where our team is preparing food, moving quickly, and focused on delivering a great guest experience. Visium gives us an added layer of continuous sanitization without interfering with the work happening in the kitchen.”

A Continuous Layer of Sanitization

While routine cleaning remains essential, Visium adds a continuous layer of sanitization that’s especially important when restaurant spaces are most active. The system works quietly in the background, supporting a cleaner environment while teams continue preparing food, serving guests, and moving through the back of house.

“The technology fits seamlessly into the space,” said Lezcano. “It’s quiet, unobtrusive, and works in the background, which is exactly what you want in a fast-paced restaurant environment.”

The installation reflects a broader shift across industries toward cleaner indoor environments, particularly in spaces where employees, guests, and customers gather every day. For Fuku, Visium supports both the team member experience and the guest experience.

“We are always thinking about how to create the best possible experience for our guests and the best working environment for our team,” said Lezcano. “Visium supports both by helping us maintain a cleaner, more thoughtful space.”

As Visium continues expanding across healthcare, sports, hospitality, restaurants, and other shared spaces, the Fuku installation demonstrates how Far-UVC technology can support busy restaurant environments without disrupting the pace of daily operations.

“This is the kind of solution restaurant operators should be looking at,” said Lezcano. “It supports the way modern restaurants need to operate today, and it represents where the industry is going.”
